About the Role

 

Brisbane Racing Club (BRC) is seeking an experienced and passionate Head Chef to lead all kitchen operations. This is a hands-on leadership role where you’ll be responsible for delivering high-quality food experiences for our members, patrons, and event guests, while fostering a positive, professional kitchen culture.

With sporting, events, and community at the heart of what we do, this role offers variety, creativity, and the opportunity to make a real impact.

 

What You’ll Be Doing

 

  • Overseeing the day-to-day operation of the kitchen and all catering services
  • Ensuring high standards of food quality, presentation, and service across all outlets, functions, and events
  • Developing, updating, and innovating menus that reflect seasonal availability, patron preferences, and current trends
  • Managing kitchen rosters to ensure effective coverage and operational efficiency
  • Leading, training, inducting, and mentoring kitchen staff to build capability and engagement
  • Creating a positive, professional, and inclusive kitchen environment
  • Managing stock control, ordering, inventory, and waste minimisation
  • Monitoring and controlling costs to ensure operations remain within budget
  • Ensuring strict compliance with food safety, hygiene, and WH&S legislation
  • Overseeing cleaning routines to maintain a safe and compliant kitchen environment
  • Supporting promotional activities, special events, and themed menus as required
  • Undertaking additional duties to support broader departmental and organisational objectives

 

What We’re Looking For

 

  • Proven experience as a Head Chef or in a senior culinary leadership role, ideally within a licensed club or hospitality environment
  • A culinary qualification or relevant certification (preferred)
  • Strong knowledge of food safety regulations and health standards
  • Demonstrated experience leading, developing, and motivating teams
  • A creative and innovative approach to menu design and food presentation
  • Sound financial acumen, with experience managing budgets and controlling costs
  • Strong organisational, analytical, and problem-solving skills
  • Ability to manage competing priorities and meet deadlines
  • Excellent communication and interpersonal skills
  • Knowledge of venue operations, events, and hospitality service environments
  • Flexibility to work evenings, weekends, and public holidays as required
